Vegetarian Rice Bowl- Asian Style

Asian food is one of my favorite foods because is healthy, light, and delicious. When I lived in Lawrence, my husband and I used to meet my brother for dinner every Friday. Our tradition was to rotate Asian restaurants in the area. Every time I go to an Asian restaurant I like to try their rice bowls because no matter where you go, it’s always a different experience. That’s why I decided to add this recipe to my blog. Rice bowls are really easy to make, and the best part is that you can switch the toppings with any kind of veggies or meat that you prefer. This is a recipe that you will want to add into the dinner rotation.

Ingredients For Veggies

  • 3/4 Cup of Mushrooms

  • 1/2 Chopped Onion

  • 1 Chopped Carrot

  • 1 Chopped Zucchini

  • 2 Tbs of Soy Sauce

  • 2 Tbs of Oyster Sauce

  • 2 Tbs of Lemon Juice

  • 1 Tbs of Water

Directions For Veggies

  • Preheat oven to 400F.
  • For the sauce, mix the soy sauce, oyster sauce, lemon juice, and water.
  • In a baking pan, place the mushrooms, onions, carrots, and zucchini. Add on top the sauce.
  • Bake for 20 minutes.

Ingredients For Tofu

  • 16 Oz of Sliced Tofu

  • 2 Tbs of Soy Sauce

  • 1 Tbs of Apple Vinegar

  • 2 Tbs of Honey

  • 2 Tbs of Minced Ginger

  • 1 Tbs of Corn Starch

  • 2 Tbs of Garlic Powder

Directions For Tofu

  • Preheat oven to 400F.
  • Press tofu for 10 to 15 minutes to make sure that all the water is out.
  • For the sauce, mix the soy sauce, apple vinegar, honey, minced ginger, corn starch, and garlic powder.
    You can also use any premade Asian sauce from the grocery store.
  • In a baking pan, place the tofu and on top the sauce.
  • Bake for 10 minutes.
  • Flip the tofu and add more sauce on top.

  • Bake for 10 min

  • 2 Cups of Steamed rice

  • Seasoned Veggies

  • Seasoned tofu

Directions for Rice bowl

  • In a bowl serve rice, then veggies, and tofu
  • Enjoy!
