Tongue with Tomatillo Sauce- Lengua en Salsa Verde

Growing up, on occasion, my mom would make tongue. She probably only made it on occasion because it takes so long to cook. I will say that tongue was one of the most fun meals that I had growing up. My mom learned how to make tongue from one of her dear friends. They lost contact with each other, but she is always remembered by the way she would cook beef tongue.

Below is my friend’s recipe: Equally delicious and exciting to eat. I love learning how to make new things, and now that we are in quarantine, why not to try making something new.

Ingredients To cook the TOngue

  • 1 Beef Tongue

  • 1 1/2 Onion (Diced)

  • 2 Garlic Cloves

  • 4 Bay Leaves

  • 5 Whole Cloves

  • Salt to Taste

Directions To cook the tongue

  • Scratch the tongue with a knife, to clean it. Kinda like brushing your tongue, when you brush your teeth.
  • Wash the beef tongue. To make sure that the tongue is clean. Then soak the beef tongue in water and vinegar for 20 minutes.
  • In a large pan add all the ingredients and water. Make sure that the water covers completely the beef tongue.
  • Cook for 3 hours or until the tongue is tender.
  • After the tongue is fully cooked, remove the tongue from pot and reserve two cups of broth for later use.
  • Remove the first layer of skin from the tongue and slice into 1-inch pieces.

Ingredients for sauce

  • 4 Potatoes (Diced)

  • 32 OZ of Tomatillo

  • 1/2 Onion (Diced)

  • 2 Garlic Cloves

  • Cilantro

  • 5 whole cloves

  • 4 Key Limes (Juice)

  • 2 TBS of Salsa verde

  • 1 Jalapeno

  • Salt and pepper to taste

  • 2 Cups reserved tongue broth


  • In a pot add water and cook the diced potatoes until tender.
  • In a separate pot add water, tomatillo, onion, garlic cloves, cilantro, and whole cloves. Bring to boil and cook for 4 minutes or until the tomatillo changes color.
  • Remove the cloves, drain the water.
  • In a blender add 2 cups of tongue broth the cooked tomatillo, onion, and cilantro. Blend well, roughly 2 minutes.
  • Next, boil the blended tomatillo mixture for 5 minutes then add the key lime juice, salsa Verde, jalapeno, salt, and pepper.
  • Add in the potatoes and diced tongue to the tomatillo. .
  • Enjoy!
