Peruvian: Spicy Lemon Lamb Shank

In South America, we are HUGE lamb fans! There are many South American dishes that even though are different, they share some connections due to our ancestors. In Grad school, I had the chance to meet couple Peruvian friends that were frequently bragging about their food. One of their favorite dishes is Lamb. I decided to do some research to surprise them and hopefully they can make it at home.

I think this a pretty delicious recipe: It has received lots of thumbs up and exciting reactions from friends and family. The best part is that once you season the meat, you stick it in the oven, wait, and you have a fantastic meal.

Ingredients

  • 1 Tbs of Chilli Powder

  • 2 Tbs of Achiote Seasoning

  • 2 Tbs of Cumin Seeds

  • 1 Tbs of Black Pepper

  • 1 Garlic Clove (Minced)

  • Orange Zest (Of 1 Orange)

  • Fresh Lemon Juice (2 Lemons)

  • 1 White Onion (Chopped)

  • 1 JalapeƱo pepper (Seeded and Chopped)

  • 2 Tbs of Honey

  • Salt (To Taste)

  • 1 Lamb Shank

Directions

  • In a bowl, mix all the ingredients to season the lamb.
  • Place the lamb in a large baking glass dish, and apply the mixture. Season for at least 3 hours.
  • After seasoning the lamb, preheat the oven to 375 F
  • Bake the lamb leg for about 1 1/2 hours.
