
Mom’s Frijoles

This year has been great to learn new and old things. This is an old recipe, my mom and her family has the best frijoles recipe. I have always wonder how my mom makes her beans but never actually tried to make them…I guess, I was too afraid to be disappointed.
Now that I know how easy is this recipe, I have been eating beans at least once a month and it never disappoints me. The best part is that beans are healthy that there is no guilt when I eat them. I wish I could say the same to every single thing I eat….

Ingredients
3 Cups of Dried Pinto Beans
3 Garlic Cloves (Minced)
1 Yellow Onion (Chopped)
2 (10 Oz) Cans Diced Tomatoes
16 Oz of Bacon
4 Oz of Chorizo
1/2 Tbs of Chili Powder
1 Tbs of Cumin
Salt to Taste
Directions
- Soak the dried pintp beans for 8 hours or overnight. Make sure to add enough water. The beans need water to soften.
- After soaking the dried pinto beans, drain the water.
- In a large pot, add the pinto beans and add water until the beans are completely covered.
- Add the garlic, yellow onion, diced tomatoes, bacon, chorizo, chili powder, cumin, and salt.
- Stir all the ingredients and cook for 2 1/2 – 3 hours or until the beans are soft.
