
Matcha Waffle With Lavender Whipped Cream and Ginger Crumb
When my husband and I lived in Kansas, we had the tradition to meet my Mother and Father in law every Sunday for dinner. Since my mother-in-law loves breakfast, a couple of Sunday nights we were surprised with breakfast for dinner, She can’t get enough excuses to go out for brunch and find places that have good breakfast. Honestly, I think my favorite meal of the day is breakfast as well. I feel like it is the only meal that you can eat something sweet, almost dessert-like, and it’s accepted as a main meal.
Now that we live in San Diego, we like to try different restaurants to be prepare when our family comes to visit us and have the best places to go out to eat. So far the best brunch that I have tried in town is at Campfire. Campfire is a restaurant located in Carlsbad, CA, that serves American food. They have traditional breakfast items with sophisticated ingredients and flavors.
This waffle is inspired in one specialty breakfast item that I tried a couple of months ago with my Mother-in-law…

Ingredients
1 1/4 Cup of All-Purpose Flour
5 Tbs of Sugar
2 Tbs of Baking Powder
Matcha Powder to taste (I recommend 1 or 2 Tbs)
1/4 Tsp of Salt
1 Cup of Milk
1/4 Vegetable Oil
1/2 Tbs of Vanilla
1 Egg
1/8 Cup of Mix berries

Directions
- In large bowl mix, all-purpose flour, sugar, baking powder, matcha powder, salt, milk, vegetable oil, vanilla and egg.
- Place the mix in the waffle maker until golden brown.
- Serve the waffle. I think this waffle goes great with fruit, lavender whip cream and Ginger Crumb.
