Guacamole

I love guacamole. As much as I love guacamole, I like it in a very specific way. I like it with lots of lemon, not spicy, and creamy. This recipe is really easy to make. It only takes a couple of ingredients and when you bring it to a party everybody loves it.

Once a month, my husband’s coworkers get together to play board games and everyone is required to bring a Vegan appetizer. The first game night we were invited to, we decided to bring guacamole, but the funny part is on this game night 3 other couples decided to bring guacamole as well. Interesting enough all three bowls were gone by the end of the night.

so, lesson learned: There is never too much guacamole!

Ingredients

  • 4 Avocados

  • Juice of one medium lemon

  • 1/4 Chopped Yellow Onion

  • 1/2 Tsp of Salt

  • 1/2 Tsp of pepper

  • 1/2 Chopped Tomato

  • 4 Tbs of Mayo or Sour cream ( Optional: Perfect for tacos or burritos. To remain vegan you will need to use vegan May or Vegan Sour cream.)

Directions

  • Smash the avocado.
  • Mix lemon juice, onions, salt, pepper, and Mayo or sour cream if you want a richer taste.
  • Right before eating add the tomato and mix all ingredients.
