Ropa vieja is shredded pork shoulder mixed with a homemade tomato-based sauce. This meal is a treat for me. I remember my dad taking me to “Mr. Patacon” when I was little. That really made my day (It would still make my day nowadays). Mr. Patacon has almost infinite kinds of patacones that you could buy. The best part is when each of us orders a different kind and you get to try a little of each. What I love of this dish are the different layers and textures that you will have in one bite.
This recipe is easy and delicious, the pork is made in a crockpot. You can throw everything in the crockpot, forget about it, and then can put it together. I hope this recipe also makes your day as well!
In a crockpot add hogao, pork shoulder, and diced tomatoes. Cook on low heat for 8 hours.
Remove pork shoulder from crockpot and shred.
In a medium saucepan reduce the drippings in the crockpot to make a thicker sauce, similar to pasta sauce.
Flatten the Plantains and fry until edges are brown. About 3 minutes each side.
To assemble, place flat the fried plantain, then the lettuce. Put the shredded pork shoulder generously, on top of the fried plantain and lettuce. Finally, Put the reduced tomato sauce, sliced avocado, and cotija cheese on top.
