
Fancy-Ass Prawns with Green Rice
I cannot count how often my mom makes this rice for lunch, but quite a few time a week. she loves it! It’s hard to not get jealous of her meal plan, because knowing how good it is, it makes sense that she wants to eat it all the time. Honestly, she makes a lot of variations to the rice seasoning to keep it interesting, but in my opinion, green rice is hard to bit.
Green rice is made with a mix of cilantro, kale and spinach. This simple three ingredients really gives more complex flavors than the plan white rice that I normally eat and it really doesn’t add much effort. I guarantee you are going to want to make this rice over and over again. It not only it’s tasty, but also you can have a fancy-ass dinner in 30 minutes!

Ingredients
3 Cups of Water
7 oz Spinach
1 Tbsp of Salt
1/2 Cups of Olive
1 Large White Onion (Diced)
3 Garlic Cloves (Minced)
2 Cups of Rice
1 Spring of Cilantro
2 Tbsp Salted Butter
10 Large Prawns on Shell
2 Lime Juice
Directions
- Blend the water with the spinach and kale.
- In medium heat, warm the oil and sauté the onion, garlic, and rice until the rice become clear.
- Add the cilantro and water in the pot, bring to boil and boil for about 5 minutes. Lower the heat, cover the cooking pot, and simmer for 15 minutes. Let all the water evaporate until the rice is dry and fluffy.
- In a separate cooking pan, melt the butter in medium-high heat. Immediately after, the butter is melted, cook the prawns one minute each side.
- Place the prawn on top of the rice, and cook for 5 minutes.
- Serve and squeeze some lime juice on top.
