Effortless and Crazy Delicious Breakfast: Huevos al Nido

The best part of living in a vacation town is that you have a responsibility of finding the best activities and restaurants to entertain your family when they come to visit. My mother in law came to San Diego to celebrate her birthday.  She being a brunch lover we found a restaurants with crazy brunch items. After celebrating with lots of food: breakfast, lunch, brunch, and dinner…. It reminded me of this popular Spanish brunch dish: huevos al nido. Easy, delicious, and quick!

There are so many ways to make it, but this is the most popular that I love. You can add different ingredient under the egg, so don’t be afraid to be creative over here. Chorizo, prosciutto, sausage, tomato sauce, parmesan cheese, potatoes… you name it! Just throw it in there and it will be amazing!

Ingredients

  • 4 Slices of Bacon (Diced)

  • 1 Packed Cups of Spinach

  • 1/4 Cups of Heavy Cream

  • 1/4 Cup of Shredded Mozzarella Cheese

  • 2 Eggs

  • 2 Italian Round Breads Loafs

  • Salt and Pepper ( to taste)

Directions

  • Preheat the oven to 350 F.
  • In medium cooking pan, add water and bacon cook for about 5 minutes.
  • Add the spinach, the heavy cream, and mozzarella cheese cook for about 3 minutes.
  • Open a hole in the middle of the round italian bread creating a “Nest”.
  • Place the spinach mix inside the “Nest”.
  • Add the spinach mixture, and on top the egg.
  • Bake until the egg white turns white.
  • Add salt and pepper
