Creamy Coconut Shrimp- Vatapá

Loving this Brazilian street food: Vatapá. There is always something special and unique than the food that you see that is cooked and sold on the streets of Bahia (One of the North coasts of Brazil). There is a reason why Vatapá is a street food and that’s because is so delicious that you are going to want to stop your routine and get a bowl to go.

Vatapá is usually eaten as a snack with rice and beans. You can also replace the raw fish with other type of meat such cod, tuna or even chicken! Delicious, healthy, and hard to resist.

Ingredients

  • 3 French Bread Rolls (Crumbled)

  • 1 Can of Coconut Milk

  • 1/2 Cup of Roasted Peanuts

  • 1/2 Cup of Roasted Cashews

  • 1/4 lb Dried of Shrimp

  • 1/4 Cup of Parsley (Chopped)

  • 1/4 Cup of Cilantro

  • 1 Medium Onion (Chopped)

  • 1 Garlic Clove (Minced)

  • 1 Tomato (Seeded and Diced)

  • 3/4 Tsp of Salt

  • 1 Tsp of Basil Leaves

  • 1 Tsp of Cumin

  • Vegetable Oil (To Cook)

  • 1 Lb Raw Shrimp

Directions

  • Mix the french bread rolls and the coconut milk together. Soak for while cook the rest.
  • Using a food processor, process the peanuts, cashews, and dried shrimp until everything is fine.
  • Add the cilantro, parsley, onion, garlic, tomato, and salt. Blend until the mixture is unified.
  • In a large cooking pan, add the mixture in the food processor and the bread and coconut milk. cook for 10 minutes.
  • Add the cumin and basil leaves and cook weel.
  • In another pan, cook the shrimp for 5 minutes or until the shrimp is fully cooked.
