
Chojin: Guatemalan Radish Salad

Chojin is typical salad in Guatemala. This salad is fresh, great to eat during this hot summer. The mint and radishes give to the salad a perfect aroma to the dish. This is a very simple and tasty salad that you can add in your next meal so easily. Perfect to bring to a BBQ party and eat it with grilled meats and beans. I also enjoy eating this salad with a hot tortilla and avocado.


Ingredients
1 lb of Radishes (Washed, Dried, and Finely Sliced with a Mandoline)
2 Limes (Freshly Squeezed)
1 Sour Orange (Freshly Squeezed)
1 Serrano Chile (Seeded and Finely Chopped)
1/3 Cup Mint Leaves ( Finely Chopped)
1 lb of Pork Belly (Cooked)
Directions
- In a large salad bowl, combine radishes, lime juice, orange juice, serrano chile, mint leaves.
- Add pork belly on top.
- Keep salad refrigerated.
