Amazing Cazuela de Mariscos: Chowder

My mom makes this soup for only special occasions, or holidays. Everybody in the house gets exited when she announces that we would have such a treat. Specially my dad, because this happens to be one of his favorite meals that he doesn’t get to eat too frequently. It’s creamy, rich, and the most satisfying soup that you could ever eat.

Now that my mom has shared with me this recipe, I realized how simple it is to make. I might be in trouble, because I might want to make it to every week.

Ingredients

  • 2 Tbs of Olive Oil

  • 1 Cup of Onion (Diced)

  • 1 Cup of Red Bell Pepper (Grated)

  • 2 1/2 to 3 Lb of Seafood Mix

  • 1 1/2 Fish Bouillon Cubes

  • 2 Tbs of Garlic Paste

  • 1 Tsp of Sazon Goya With Saffron

  • 1 1/4 Tsp of Salt

  • 3/4 Tsp of Pepper

  • 4 Cups of Coconut Milk

  • 2 Cups of Milk

  • 4 Tbs of Flour

  • 1/4 Cup of White Wine

  • 1 1/2 Tbs of Cilantro

  • 1 Tbs of Parsley

Directions

  • In a large cooking pan, add the olive oil and cook on medium heat the onion, red bell pepper, seafood mix, fish bouillon, garlic, Sazon Goya with Saffron, salt and pepper. Cook for about 10 minutes.
  • Add the coconut milk, milk, and flour. Stir until reaching smooth consistency and simmer for 15 minutes.
  • Add the white wine and simmer for other 15 more minutes
  • Serve!
