Rockfish Ceviche

Perlita, one of THE best people that I have met in San Diego, taught me how to make this recipe. She usually makes it with shrimp, and it’s delicious. However not that long ago, my brother and sister in-law, came to visit us. During their visit, my husband and I decided to take them to the fish market, and we bought Rockfish. After a delicious dinner prepared by my brother-in-law, I decided to try Perlita’s ceviche recipe with rockfish instead of shrimp.

I just want to thank Perlita for sharing this recipe with me. I really think that life put Perlita in my path; to learn how to be kind, positive, and light-hearted. She is always surprising me with homemade meals and interesting enough they always come when I have had a long day. If you are obsessed with ceviche, like me, I would recommend trying this recipe. You can also stick with shrimp, and make it as tasty as Perlita does.

Ingredients

  • Ceviche
  • 1 lb rockfish fillets, bones removed, cut into ~1/2 inch pieces

  • 3/4 Cup Lime Juice (about 6 limes)

  • 1 large tomato, diced

  • 1/2 small red onion ( 1/4 if the red onion is large)

  • 1 English cucumber diced

  • 1 or 2 serrano chiles, Minced (optional) – If you don’t like spicy leave out

  • 1/4 Cup Cilantro leaves, diced.

  • 1 tbsp kosher salt

  • Greek Yogurt Spread
  • 1/4 Cup Plain Greek Yogurt

  • 2 Tbsp Lime Juice (1 Lime)

  • 1 Tbsp Cliantro Stems Finely Minced.

  • Finishing Ingredients
  • Store Bought Tostadas

  • Alvacados

Directions

  • Ceviche
  • In a Large Bowl, mix the fish with lime juice. Set aside for 15 minutes until fish is mostly opaque
  • Chop, dice, and mince the remaining ceviche ingredient. Add to the large bowl, after the fish is opaque.
  • At this point, the ceviche is ready to eat. Take a taste and adjust salt if needed.
  • Greek Yogurt Spread
  • In a medium bowl mix the greek yogurt, lime juice, and cilantro stems. Mix well and taste. Add salt if desired.
  • Assemble
  • On the Tostada, spread the greek yogurt mixture evenly.
  • Now add the ceviche on top, then some diced avocado.
  • Enjoy!
