Pea Puree

I’m always looking for different ways to cook vegetables. What I love of this recipe is that even though it sounds fancy and difficult, it’s an easy recipe that you can make in a few minutes. I also love that peas are so healthy and can be found all year round. Don’t forget that peas are loaded with antioxidants and protein, so it’s a perfect side to add to your meal.

A few days ago, I was watching The Final Table on Netflix. One of the challenges was to make a dish where the main ingredient was peas. Couple people made soups and other people made pea jelly served with fish. It’s incredible how all of the contestants’ used different ingredients to twist the recipes to make them their own. So I decided to take this challenge as well and created my own pea recipe.

Ingredients

  • 1 1/2 Cup of Frozen Peas

  • 1/4 Tsp of Salt

  • A Pinch of Ground black Pepper

  • 1/3 Cup of Water

  • 2 Tbs of Unsalted Butter (Make it vegan, by using a nut milk)

  • Olive oil (Optional)

  • 1 Tsp of Fresh Lemon Juice

  • 1 Tbs of Tarragon

  • 1 Tbs of Finely Chopped Parsley


  • 1 Tbs of Finely Chopped Onion

Directions

  • In medium-high heat, cook until tender the peas, salt, and pepper, water and butter.
  • Using a food processor, mash the peas until reaches the texture desired. If you want it a little bit more creamy, add oil.
  • After the peas are mashed, add fresh lemon juice, tarragon, parsley, and onion.
