Creamy Chipotle Chicken

This chicken is so yummy. Perlita, my good friend and neighbor, taught me how to make it. I know, lately Perlita has been featured a lot, but when your friend is a good cooker… you gotta share with the world people’s talents LOL. What I love of this chicken is that it is creamy, spicy, and easy to make. When Perlita told me how she made it, I couldn’t believe how simple it was. The sauce has layers of flavors. which makes it hard to believe that it doesn’t have too many ingredients.

Since this is a Mexican recipe, this chicken is spicy. Depending on your spice tolerance you can make it as spicy as you want, by adding more or less chipotle peppers. I usually don’t use peppers or chiles on my recipes, mostly because coming from Colombia, there is an inherent fear of spice. Now, that I have been hanging out more with Perlita, that fear has been fading away. I have learned so much about the different peppers and spices that are out there. So far my favorite one is the chipotle pepper because, beside the spice, it gives a smoky flavor that I was surprised to find.

Ingredients For the Chicken

  • 8 Chicken Drummed sticks

  • 1/4 Yellow Onion (Chopped)

  • 2 Garlic Cloves (Minced)

  • 1/2 Tsp Oregano

  • Salt (To taste)

  • 14 Oz Of Dice Tomatos

Directions fOR THE chICKEN

  • In a large pot add water, Chicken Drummed Sticks, Yellow Onion, Garlic Cloves, Oregano, Salt, Diced Tomatoes. Boil for 30 minutes
  • Add the diced tomatoes and cook for 15 minutes.
  • Drain the chicken and safe some chicken stock for the chipotle sauce.

Ingredients For the CHipotle Sauce

  • 8 Oz of Sour Cream

  • 3.5 to 7 Oz of Chipotle Peppers

  • 1/4 Yellow Onion (Chopped)

  • 2 Garlic Cloves (Minced)

  • 2 Small Chicken Bouillon Cubes

  • 5 Small Potatoes (Diced)

  • 14 Oz Of Dice Tomatos

  • 3/4 Cups of Chicken Stock ( Use the chicken stock you made when you cooked the chicken)

  • Salt and Pepper to taste

Directions For Chipotle Sauce

  • In a large pot add all ingredients and cook until potatoes are soft (About 1hr-45 min)

Directions For chipotle Chicken

  • Mix the chicken and the chipotle sauce.
