Arroz Con Pollo (Rice with Chicken)

Growing up, this was one of my favorite meals. Actually, arroz con pollo is still one of them. Every time. I eat arroz con pollo it reminds me about how exciting it was to come home from school to hear that we were going to have it for dinner. This recipe has it all: it is easy, has veggies, protein, and when you eat it you feel the comfort of the rice. This is also one of my mom’s favorite recipes. I think it is because with few ingredients you can make a lot of food.

In Colombia, each house has its own recipe. The recipe below is my own version, I love tomatoes, so you will see that you will need to have lots of tomato paste and diced tomatoes. This rice is flavorful, perfect for meal prep, and everybody in your house will love it, guaranteed! Let me know how it goes 🙂

Ingredients For The Chicken

  • 3 Chicken Breasts

  • 1 Envelope of Sazon Goya con Culantro y Achiote

  • 3 Oz of Tomato Paste

  • 7.5 Oz of Diced tomatoes

  • Pinch of salt

Directions For the chicken

  • Prepare your sous-vide by setting it to 167 F.
  • Season the chicken breast with all the ingredients.
  • Place the chicken breast in a Ziplock bag and Sous Vide for 1 hour.
  • after fully cooked, shred the chicken breasts.

Ingredients For the vegetables

  • Olive oil (To Cook)

  • 12 Oz of Mixed Frozen Vegetables

  • 15.5 Oz Diced Tomatoes (Drained, do not throw away the juice, you will need it for the rice)

Directions For the Vegetables

  • In a medium cooking pan, add the oil, frozen vegetables, and diced tomatoes.
  • Cook until vegetables are tender.

Ingredients fOR the Rice

  • Olive Oil (To Cook)

  • 1 Garlic Clove (Minced)

  • 1 White Onion (Chopped)

  • 1 Envelope of Sazon Goya con Culantro y Achiote

  • 2 Cups of Rice

  • 1 Cube of Chicken Stock

  • 1 Cup of The Reserved Tomato juice

  • 1 1/2 Cups of Chicken Stock

  • 6 Oz of Tomato Paste

Directions For the Rice

  • In a large cooking pan, add olive oil, garlic, and white onion. Cook for 5 minutes.
  • After the garlic and onion are slightly cook, add the sazon goya, rice, Chicken stock, tomato juice. chicken stock, and the tomato paste.
  • Bring to boil the mix and boil for 10 minutes.
  • In low heat, cook the rice until the grain is soft, and the liquid has evaporated.
  • Mix all ingredients and serve!
